I'm all for my kids being crafty, but what I really love is a craft that requires minimal set up, clean up and mess. (I never said I was the fun mom.)
I'm always finding these Magic Paint Posters at Michael's in the dollar bin and we love them.
Each page has a strip of "paint" at the bottom that's activated by water. You dip your paint brush (or Q-tip) in water, then into the paint, and paint away. I have a huge stash of these books with all of our art supplies - I can't seem to resist whenever I see a new theme in the store - and they satisfy my kids' desire to paint without making a huge mess. Sometimes I'll bring them out before the breakfast dishes are cleared, since everyone is already seated at the table, to postpone the inevitable, "What are we doing today?" summer refrain.
I added one of these books to the party favors at my son's recent birthday party and they were a huge hit.
I would love to hear about your favorite easy (and low-mess) art projects in the comments!
