Ok, I don't know about you, but I'm a sucker for a donut. Not just any donut, but a cinnamon/sugar/cake one to be exact. (Actually, my FAVORITE kind is a blueberry cake donut, but I do not know how to make those yet, so until then, THESE rock my casbah.)
As I fretted about before, my boys' outdoor birthday party was indeed rained out, so two weeks later, we invited all the guests to the local amusement park to complete the celebration. Since we already fed and entertained everyone at our house on their actual party day, there wasn't much I wanted to do or bring to the park as far as concessions go.
So, I found this recipe from my dear friend, Allie, and made these donuts for the kids to enjoy once they were finished riding the rides. It was the right choice and perfect size for the little ones to gobble down. (Plus, popping a few in my mouth the night before didn't make me feel too guilty.)
Sugar Donut Muffins
Ingredients:
3/4 cup sugar
1 large egg
1 1/2 cups all purpose flour
2 tsp baking power
1/4 tsp salt
1/8 tsp ground nutmeg
1/8 tsp cinnamon
1/4 cup vegetable oil
3/4 cup milk
1 tsp vanilla extract
2 tbsp butter, melted
1/2 cup sugar, for rolling
Instructions:
Preheat oven to 350F. Lightly grease a muffin tin with cooking spray or vegetable oil.
In a large bowl, beat together the sugar and egg until light in color. In a small bowl, whisk together the flour, baking powder, salt, nutmeg and cinnamon. Pour the flour mixture into egg mixture and stir to combine.
Add in vegetable oil, milk and vanilla extract. Mix well. Divide batter evenly into 24 mini muffin cups.
Bake for 15 minutes, until a tester inserted into the center comes out clean. While muffins are baking, melt butter and pour remaining sugar into a small bowl. When muffins are done, lightly brush the top of each with some melted butter.
Cool on a wire rack.
NOW EAT! (Then thank me later.)
(Side note: I had left out the cinnamon in the batter and tried to compensate with rolling the muffins in the cinnamon AND sugar. My final analysis? TOTAL SCORE.)
