I have a very serious confession to make: I don't really like corned beef and cabbage. I know, awful, right? Unfortunately, my Irish-blooded husband loves corned beef and makes a whole mess of it every St. Patrick's Day, leaving us with pounds upon pounds of leftover corned beef.
This year, in an effort to do something delicious and different with the massive amounts of leftovers, I'm going to make corned beef tacos! I got the idea from the restaurant Hooley's in San Diego; their tacos were awesome and definitely helped in making corned beef and cabbage grow on me. The best part is, they're super easy to make!
Simply re-heat and shred up your leftover corned beef, scoop some onto a corn tortilla, top with coleslaw, shredded cheese, and your favorite salsa and enjoy! Trust me, you will not be disappointed.

I think I heard about that restaurant today! I don't really like corned beef and cabbage but I heard about these tacos on the radio today and they sound great! My brother made Guiness shakes for the family yesterday and apparently they were delicious.
