I'm hosting my best friend's baby shower next month and want to keep the menu eclectic, delicious and completely devoid of any crust-less sandwiches. To that end, I've scoured the Internet and found a handful of recipes that look great, easy to make and (hopefully) won't leave guests starving to death when they get home. More importantly, these recipes are not baby shower exclusive; they would be great for a bridal shower or any other event you can think of. (Click on the links to view each recipe.)
Sun-Dried Tomato & Goat Cheese Skewers
These skewers are a fresh take on the old tomato-mozzarella-basil ones, not to mention they're easy to assemble and can be prepared well in advance.
Asian Chicken Salad
This salad will only get better with time, so it's another great make-ahead recipe. I would serve individual portions of this salad in mini Chinese takeout containers.
Shrimp or Chicken Lettuce Wraps with Creamy Caesar Dressing
To make this more substantial, I would substitute the lettuce for tortillas or croissants. Now THAT is a sandwich I can get behind!
Corn, Tomato & Avocado Salad
Add a side of tortilla chips and this salad could do double-duty as a salsa.
Rainbow Veggie Skewers
Okay, so crudites isn't exactly ground-breaking, but I think skewering the vegetables makes things a little more fun and unique. In addition to the hummus, I'd also serve this with a side of ranch dressing, because, well, it's ranch dressing.
Puff Pastry Twists with Sun-Dried Tomato Pesto
Puff pastry from a box is so easy and yet, so delicious. I think these twists will be great straight out of the oven or at room temperature.

My go to recipes for baby showers are always the boxes of frozen appetizers from Trader Joe's, but your ideas sound actually even easier!
No matter what though, I always have to make cupcakes!

Great ideas!
My friends are doing my shower w/ a "kid food" theme (we've got lots of people to feed and kid food is cheap!). Macaroni and cheese, chicken nuggets, goldfish crackers, PB&Js cut into shapes, etc. etc.

Ooooh, HollyLynne, that is a really cute idea! I was going to try to work something along those lines into the shower...Perhaps also having some of the food my BFF has been craving during her pregnancy (which in her case has been a lot of "kid" food.")
