Nothing says fall to me quite like the smell of cinnamon wafting through the air. I recently made these Cinnamon Sugar Roasted Almonds for an Oktoberfest celebration and they were a smashing success. Some of our guests even asked where I bought them!
This is the type of recipe that looks and tastes fancy-schmancy, but is a piece of cake to make. Oh, and the aroma of cinnamon, sugar and almonds baking away? It's heavenly. Need a present? I think these would look so sweet packaged in a ribbon-tied mason jar and given as a hostess or holiday gift. Homemade, delicious and budget-friendly ... you can't beat that!
Cinnamon Sugar Roasted Almonds
(adapted from RecipeZaar)
Ingredients
- 3¼ cups of whole almonds
- 1½ cups of sugar
- 3 heaping tablespoons of cinnamon
- 1 egg white
- 1½ tablespoons of vanilla
- a pinch of salt
Directions
- Preheat your oven to 300 degrees.
- Line a baking sheet with aluminum foil, then spray with canola oil.
- Combine the sugar and cinnamon in a large bowl.
- Beat the egg white in a large bowl until frothy, then stir in the vanilla and salt.
- Add the almonds to the egg mixture and toss until all are completely coated.
- Pour the coated almonds into the cinnamon/sugar mix and again, stir until all are completely coated.
- Evenly spread the coated almonds onto your baking sheet and bake for 25 minutes, stirring once halfway through.
- Let cool, then store the almonds in an airtight container.










I can almost imagine the smell as they bake! I will definitely have to try this, myself.
